In honor of a week dedicated to food and photography, I thought I would share a quick DIY recipe! My husband is in love with all food items having anything to do with tomatillos. I stumbled across this easy fresh green salsa recipe when we were dating and it became a quick staple. Similar to a guacamole, but ever so slightly tangier…it is a huge favorite in our household. I hope you like it as well!
1/2 cup finely chopped tomatillos (about 2 medium)
1/2 medium cucumber, peeled, seeded and chopped (about 1/2 cup)
1/2 cup chopped fresh cilantro
1/2 medium celery stalk, finely chopped (about 1/4 cup)
3 tablespoons fresh lime juice (about 2 limes)
1 green onion, thinly sliced (about 2 tablespoons)
2 tablespoon extra-virgin olive oil
1/4 teaspoon salt
1 ripe avocado, chopped
Combine all ingredients in a medium bowl. Serve immediately, or cover and chill.
Yields: 8 servings (serving size 1/4 cup)
