
With the holidays ahead of us, and events scattered throughout the next couple of months, I wanted to take a moment to share one of my all-time favorite recipes. In so many ways, this mushroom quiche is my all-time favorite, as it is so perfect for so many occasions…..it is a wonderful compliment to any holiday dinner, it is great for gifting to friends and family and it is perfect to keep in the fridge and snack on for breakfast or lunch. On top of that, it is so easy to make! And, it comes from my FAVORITE cookbook in the whole wide world, the Houston Junior League’s Peace Meals, so there are even more amazing recipes where it came from!



Mushroom Quiche
*From the Houston Junior League cookbook, Peace Meals
1 refrigerated pie crust, unbaked
1 cup shredded Swiss cheese
1/2 cup freshly grated Parmesan cheese
1 tablespoon unsalted butter
8 ounces fresh button mushrooms, sliced
3 eggs
1 cup heavy whipping cream
dash of white pepper
1/4 teaspoon coarse salt
1 1/2 teaspoons Worcestershire sauce
Preheat the oven to 350 degrees F. Place the pie crust in a 9-inch pie pan; sprinkle with the Swiss and Parmesan cheeses. In a sauté pan, melt the butter over medium heat. Sauté the mushrooms until softened, about 5 minutes. Pour the mushrooms into the pie shell. In a medium bowl, beat together the eggs, cream, white pepper, salt and Worcestershire sauce, and pour the mixture over the cheese and mushrooms. Bake until golden and set, about 35 minutes. Cool slightly before cutting and serve.
A couple of tips from me:
-The first time I made this I burned my crust! To avoid this, cut a long narrow strip of tin foil and wrap it around the edge of the pie crust so that it shields the crust edge only. Do this before you start baking it, as it will be too hot to handle once in the oven.
-Drain the mushrooms before placing them in the pie crust.
-I may or may not use a titch extra cheese….wink wink.
-I use Immaculate Bakery’s Ready to bake Pie Crusts, found at Central Market. If you are looking for a one, these are great!!
